It is as difficult to imagine summer without summer fruits, as difficult it is to imagine Diwali without Kaju Katli. The sweltering heat of India does manage to induce some good eating habits in us. Just try keeping a plateful of watermelons, mangoes and jamuns in front of us during this time, and watch it disappear in no time. One of our all-time favourite summer fruits is pineapple. Also called ananas in Hindi, pineapple is a renowned for its spiky outer skin, and crunchy, yellow pulp. One quality about pineapple we adore is that it is not overtly sweet or mushy. This is what makes it a perfect pick for many desserts and drinks. We have all sneaked in that extra piece of pineapple sitting pretty on top of a cake without anyone knowing, pineapples are also used lavishly in making custards and pies. Much like aam panna, pineapple panna also celebrates the chief ingredient in all its glory. This drink is for all pineapple lovers, if you aren’t so much of a fan, it is better to keep away.
To make this pineapple panna, all you need to do is roast pineapple, until well-roasted from all sides. Cut them in smaller chunks, juice the pineapple. Now to this juice, mix in some black salt, cumin or jeera powder, some sugar. Squeeze-in the lemon. Serve chilled garnished with roasted cumin and chopped mint, and you are done. Sounds like a cakewalk right?
