Uggani is one of the most popular breakfast or brunch meals on the streets of South India. This dish is also known as vaganni, buganni or burugula upma and is one of the easiest things to make. Puff rice is primarily used in a lot of meals and sometimes also used in various kinds of snacks. Whether it is to make bhel puri or have murmure tossed in oil and spices, the versatility of puff rice is such that it can adapt to any taste you want.

Puff rice can be made into ready-to-eat cereals by heating rice kernels under high pressure in the presence of steam to form puffed grains. Even though most of us have enjoyed bhel puri, or some chaat of puffed rice, we are unaware of the variety of nutrients that this snack has to offer. This small and crunchy snack is known to alleviate constipation, promote digestion, aids in weight loss and is also known to provide energy.

Street-Style South Indian Uggani Recipe:

To make the healthy and tasty uggani, you would require puff rice, a bowl of water, roasted gram dal, green chillies, chopped coriander, chopped onion and tomato, turmeric powder, salt, chilli, mustard seeds, raw peanuts, and curry leaves. Firstly, wash the puffed rice and squeeze the excess water. In a pan, add oil, mustard seeds, urad dal, curry leaves and peanuts. Cook these until they turn light brown. To this, add the spices- salt, turmeric, and chilli according to your taste. With spices, also throw in your chopped onion and tomatoes. When the tomatoes and onion turn soft, put the puffed rice in the pan and give it a good mix. Squeeze a lemon from the top and let it cook for 5 minutes under a medium flame and serve it in a bowl.
